Ingredients

  • 8 Pork sausages
  • 8 Bacon rashers
  • 2-3 Large vine tomatoes Washed and halved
  • 300 g Mushrooms Washed
  • 4 Eggs Medium, free-range
  • 800 g Baked beans x2 tins
  • 1 tsp Herbs Oregano or thyme
  • Salt and freshly ground black pepper
  • Drizzle of olive oil

Instructions

  • Preheat the oven to about 200℃ fan/400F/220℃ or 425F/Gas Mark 7.
  • Start with adding your sausages into an oven dish or roasting tin and putting in the oven. Leave some room between each one so they cook evenly.
  • Line a baking tin and add your halved tomatoes and mushrooms on top. Drizzle a little extra virgin olive oil over and season with herbs, salt and freshly ground black pepper. Put into the oven.
  • After 20 minutes, add your bacon rashers on a grill pan into the oven too.
  • Crack your eggs, one at a time, into individual muffin holes and add into the oven, along with your beans in an ovenproof dish. When cooked, run a sharp knife around the edge of each egg mould and scoop them out.
  • When everything is cooked through, serve onto plates with your favourite sides.

Notes

Quantities: We have given quantities to the recipe based on 4 people, but these are a loose guide. If you’d prefer more or less of something, simply adjust accordingly
Timings: The timings for cooking will slightly depend on the type of ingredients you have. For example, thicker or thinner sausages and bacon might have slightly different results, so keep an eye on them in the oven to see how they’re doing
Egg timings: When it comes to the eggs, this also depends on how you like them. As a guide, I’d say 20 minutes is ideal if you like them runny
